TILTON - Over 100 sugar shacks all across the Granite State celebrate the 21st annual Maple Weekend.
The yearly tradition welcomes people to learn the syrup-making process.
"The process itself is very simple. Collect it out of the tree, boil it," says Paul Proux.
His father owns Just Maple in Tilton. Proux and his father have been making maple syrup for more than two decades. Every year they participate in maple weekend put on by the Maple Producers Association in March. Syrup makers across the state celebrate the weekend in their own way.
"Some just have a sap house where people can come in, sample, watch how things are done," says Proux.
The Prouxs have about 600 taps on sugar maple trees all over the town, and they make about 150 gallons of syrup each season. People who visit Just Maple can take a tour and leave with a new appreciation of the tedious process.
"You should boil sap within 48 hours of collecting it...the days can get long; they can get twelve hours, 14 hours long" says Proux.
The warm weather was a big factor in an irregular season this year.
"This season it would flow great for a couple of days then it would stop and you wouldn't get anything for a week" says Proux.
Despite the short season, Proux is anticipating a great maple weekend.
"Many hundreds of people come," says Proux. "Old friends that you haven't seen for years, they'll hear about it and they'll come up, and we do a good amount of business of maple weekend".
