Bagged salads help grow salmonella, increase risk of getting sick
It may be time to stop buying bagged salad.
Damaged salad leaves in bagged salads help grow salmonella, a study published in the American Society for Microbiology says. Researchers looked at salad juices in water, which mimicked the environment inside the bagged salads that are available in store.
They found that after five days in the fridge 100 salmonella bacterium multiplied by approximately 100,000. Pathogens of salmonella seemed to prefer spinach, the research showed.
Researchers also found that salad juices encouraged the formation of salmonella biofilms, or thin layers of the bacteria that cling to the leaf and are resistant to being washed off.
The juices help salmonella stick to the salads' plastic containers.
